| Lemon Ginger Beef
Ingredients:
3/4 pound flank steak
1 Tbsp. cornstarch
1 Tsp. dry sherry
1 Tbsp. oil
1 clove garlic, minced
1 cup thinly sliced carrots
1 medium onion, diced
1 can green beans, drained
1 cup sliced mushrooms
Sauce:
Combine all of the following
3 Tbsp. fresh lemon juice
2 Tbsp. honey
1 Tbsp. dry sherry
1/2 tsp. ginger
1 clove garlic minced
1 tsp. corn starch
Instructions:
Slice meat in thin bite-size
pieces, across the grain. Combine with cornstarch, sherry and
one tablespoon oil. Marinate for 30 minutes. Prepare lemon
ginger sauce. Heat wok or skillet. Add remaining oil. Stir-fry
meat 2-3 minutes. Remove from pan. Add carrot and onion and
cook 2 more minutes. Add beans, mushrooms and lemon ginger
sauce and bring to a boil. Cook, stirring constantly, until
thickened. Return meat to pan and heat through. Makes four
servings. |
