Carrot Orange Bran Bread
Ingredients:
1 cup skim milk
2 cups Raisin Bran cereal
1-3/4 cups flour
1/2 cup sugar
1 Tbsp. baking powder
1 Tbsp. grated orange rind
2 egg whites, slightly beaten
1/4 cup vegetable oil
1 cup coarsely grated carrots
Instructions:
Preheat oven to 350 F. Pour
milk over cereal in a large bowl; set aside. Mix flour with
sugar, baking powder and orange rind. Mix in egg whites and
oil to soften cereal. Add to flour mixture and mix just until
moistened. Fold in carrots. Pour into 9 x 5-inch loaf pan and
bake for 65 minutes or until knife inserted in center comes
our clean. Cool in pan for 10 minutes. Remove from pan and
continue cooling on rack. Makes 12 servings. |
